Therese's Kimchi Nourish Bowl

Ingredients

  • 1 egg

  • 1/2 tbsp butter

  • 150g mix of brown & red rice (or rice of choice)

  • 1 clove garlic

  • 100g small cremini mushrooms

  • 2-3 stalks broccolini- tough ends removed

  • 100g corn kernels- defrosted from frozen or drained from can

  • 100g kimchi

  • 1 stalk spring onion- finely sliced


Instructions

  1. Boil the egg for 6 1/2 minutes for a soft-boiled egg. Set aside in a bowl of chilled water

  2. Prepare your rice in a rice cooker or according to packet instructions

  3. Heat the butter in a fry-pan. Add the mushrooms and garlic, season generously with salt and pepper and fry for 2-3 minutes.

  4. Add the broccolini to the pan, and season with salt. Cook for 2-3 minutes while also tossing the mushrooms. Remove the broccolini once it is slightly charred.

  5. The mushrooms will require an extra minute or two- they’re ready once they’re golden brown all over. Remove from pan and set aside

  6. Add the corn to the pan, season with salt and toss for 1-2 minutes or until warmed through. Remove from pan.

  7. Spoon the warm rice onto the base of the serving bowl, then arrange the ingredients around the bowl in separate segments.

  8. Peel & slice the egg in half, and gently place this in the centre

  9. Top with a handful of sliced spring onions
