Therese's Kimchi Coleslaw

Serves 4 as a side

Dressing Ingredients

  • 1 garlic clove- minced

  • 2 tbsp rice wine vinegar

  • 1 tbsp sesame oil

  • 1/2 tbsp gochujang korean chilli paste

  • 1/2 tbsp freshly minced ginger

  • 1/2 tbsp soy sauce

  • 1 tbsp sugar or honey

Instructions:

  1. Combine all dressing ingredients in a small jar and shake to combine.

  2. Set aside for a few hours to allow the flavours to infuse

Slaw Ingredients:

  • 100g kimchi

  • 1 carrot- scrubbed & grated

  • 1 beetroot (raw)- peeled & grated

  • 1/4 head white cabbage- thinly sliced

  • 3 small radishes- scrubbed & thinly sliced

  • 1 handful of pea sprouts

  • 2 stalks spring onions- thinly sliced

  • 1 tbsp toasted white sesame seeds

Instructions:

  1. Prep all of the fresh vegetables and toss to combine.

  2. Garnish with pea sprouts and scatter with sesame seeds & spring onions.

  3. Drizzle the dressing over 30 minutes prior to serving.
